Have any of you noticed this? I'm getting really aversed to red meat and processed/industrialized food as I'm tapping into deeper states

It happened for me; however, I have had to go back to a carnivorous diet due to health issues. So, be prepared to allow things to change for you both ways.

Happened for me also. I had vegan episode but it was forced, so I gave it up. Recently it came itself, but still my body needs some substances that one finds easily in meat.
This is a problem - how to balance harmless attitude with keeping body healthy and at the same time keeping meditation deep. I found impossible to eat meat/eggs/fish/onions/garlick/ginger/leeks and maintain deeper meditation - those things are either giving me negative sensations or I feel my body is trying to remove them while meditating.

Interesting findings, Janek. I suppose it depends upon how well established we are in deep meditation. For instance, I consume on a regular basis most of what you have found interferes with your meditation; whereas, I still seem to have facility with deep meditation experience.

That would be very good news for me, because it means that after establishing in deep meditation there is no big difference in food eaten. Right now I observe many differences between meditations after various meals and the lighter the food the easier the meditation goes.

Yes, I too noticed the same thing early on in my contemplative life.
